Well, here in NJ we are up to our eyeballs in snow, the roads are a mess and the kids’ schools were closed, so today was devoted to cooking up whatever was in the house. I started off with a red cabbage slaw, added some red quinoa that I got at WF last week and finished up with a pot of ‘baked’ adzuki beans. I am trying to up my husband’s plant-based food intake, after some bad news on his cholesterol at his last doctor appt and I think I may have overdone it. I have been a vegetarian for several years, but my husband and children like their meat and are reluctant to change. Luckily, my younger daughter really liked the red cabbage (woohoo!), which was just the cabbage, thinly sliced red onions and an apple cider vinegrette. I didn’t really have any takers on the beans, just me, though the dogs looked really interested. Well, this year should be interesting as we all try to transition to a more plant-based diet and I try to find recipes that even my picky 15 yr old will eat. Stay tuned.
